→ Noodles & Finishing

19 - 8 oz wide egg noodles
20 - 1/2 cup frozen peas
21 - 2 tbsp fresh parsley, chopped (optional)

# How to Make:

01 - Season the chicken pieces evenly with salt and black pepper.
02 - Heat butter and olive oil in a large pot or deep skillet over medium-high heat. Add chicken and cook until lightly browned and cooked through, about 5 to 6 minutes. Remove chicken and set aside.
03 - In the same pot, add onion, carrots, and celery. Cook for 4 to 5 minutes until softened. Add minced garlic and cook for 1 minute more.
04 - Stir in flour and cook for 1 to 2 minutes to form a roux, stirring constantly.
05 - Gradually whisk in chicken broth, whole milk, and heavy cream. Stir in Dijon mustard, dried thyme, dried parsley, paprika, and adjust with salt and pepper.
06 - Bring mixture to a simmer and cook for 5 minutes, stirring frequently until thickened.
07 - Meanwhile, cook egg noodles in a separate pot according to package instructions. Drain and set aside.
08 - Return the chicken to the sauce along with frozen peas. Simmer for 2 to 3 minutes until heated through.
09 - Toss the cooked egg noodles into the sauce, stirring gently to coat thoroughly.
10 - Sprinkle with chopped fresh parsley before serving, if desired.

# Expert Tips:

01 -
  • Everything happens in one pot, which means less cleanup and more time on the couch
  • The creamy sauce comes together faster than you expect and tastes like something that simmered all day
02 -
  • The sauce continues thickening as it stands, so do not panic if it seems slightly thin at first
  • Keep the heat at medium or lower once the dairy goes in, high heat will make your sauce separate
03 -
  • Prep all your ingredients before you start cooking, the sauce moves fast once you start adding liquid
  • Taste your sauce before serving, adjust salt and pepper until it tastes exactly right to you
