# Ingredient List:

→ Strawberry Layer

01 - 1 cup fresh strawberries, hulled and sliced
02 - 2 tablespoons granulated sugar
03 - 1 tablespoon fresh lemon juice

→ Matcha Layer

04 - 2 teaspoons high-quality matcha powder
05 - 3 tablespoons hot water, 175°F
06 - 3/4 cup milk, dairy or plant-based
07 - 1 to 2 teaspoons honey or simple syrup

→ Tapioca Pearls

08 - 1/2 cup black tapioca pearls
09 - 2 cups water for cooking
10 - 1 tablespoon brown sugar

→ Assembly

11 - 1/2 cup ice cubes
12 - Additional milk as needed

# How to Make:

01 - Bring 2 cups water to a boil in a small saucepan. Add tapioca pearls, stir, and cook for 5 to 7 minutes or according to package instructions until chewy. Drain thoroughly and combine with brown sugar. Reserve.
02 - Combine strawberries, sugar, and lemon juice in a blender. Blend until completely smooth. Taste and adjust sweetness as needed.
03 - In a small bowl, whisk matcha powder with 175°F water using a bamboo whisk or small frother until fully dissolved and frothy. Stir in honey or simple syrup. Gently add milk and mix thoroughly.
04 - Divide cooked tapioca pearls between two glasses. Pour strawberry purée over the pearls. Add ice cubes evenly to both glasses. Slowly pour matcha milk mixture to create distinct layers. Add additional milk if desired.
05 - Serve immediately with wide boba straws. Stir thoroughly before drinking to combine flavors.

# Expert Tips:

01 -
  • It looks like a fancy café drink but comes together in your own kitchen without requiring a tea ceremony or special equipment.
  • The layering is almost meditative to watch, and that first sip of cold strawberry hitting the warm matcha undertones feels genuinely luxurious.
  • You can adjust the sweetness and creaminess to match your exact mood, making it personal every single time.
02 -
  • The water temperature for matcha matters more than you'd think; boiling water turns it bitter and breaks the flavor, so let it cool to around 80°C (that's hot but not steam-rolling hot) before whisking.
  • If your matcha isn't whisking into a frothy layer, it probably has lumps hiding, so sift it through a fine mesh before adding water—it sounds fussy but makes a real difference in texture and taste.
03 -
  • Prep the boba first thing because it needs time to cool, and warm boba floating in your drink is nobody's favorite experience.
  • Keep a little extra matcha whisked and ready to pour slowly—rushing the final pour means the layers won't stay distinct, so take your time and enjoy watching it come together.
