The first time I prepared a rib board for Father’s Day, the aroma of smoky, tender meat danced through the kitchen, making it impossible to resist sneaking bites. The sizzling sound as the ribs hit the grill was pure music, and I couldn't help but feel a sense of pride as they began to caramelize beautifully. Each layer of flavor reminded me of sunny afternoons spent in the backyard with my dad, sharing stories between bites. This BBQ rib board isn't just a meal; it’s a celebration of family and togetherness that brings everyone to the table. Trust me, your loved ones will rave about this dish long after the last rib is gone.

When I served these ribs for the first time, my whole family gathered around, and I could feel the excitement crackling in the air. Everyone was eager for that first bite, and watching their eyes light up was unforgettable. The combination of flavors and textures had us all lost in the moment, laughing and reminiscing about past BBQs. I realized then that this rib board was more than just food; it was a bridge that connected us all in joyous celebration.

Ingredients

  • Ribs: Tender St. Louis-style pork ribs are the star, but don’t skip removing the membrane for optimal tenderness.
  • Olive oil: Just a light brush helps the spice rub adhere beautifully.
  • Brown sugar: This adds a rich sweetness that balances the spices perfectly.
  • Smoked paprika: The key to infusing that deep smoky flavor without a smoker.
  • Three unique sauces: Each brings its own personality to the dish, from sweet to tangy to spicy.
  • Optional accompaniments: Sliced pickles and cornbread enhance each bite and elevate the presentation.

Instructions

Prep the ribs:
Carefully remove the thin membrane from the bone side for the best texture. Brush with olive oil and rub in the spice mix to coat them well.
Get the grill going:
Preheat your grill or smoker to 120°C/250°F for that low-and-slow cooking. If you're using the oven, set it to 140°C/285°F.
Cook the ribs:
Place the ribs, bone-side down, gently on the grill. Cook them covered for about 2 hours, turning them once to ensure even cooking.
Make the sauces:
Simmer all the sauce ingredients in separate saucepans for about 10-15 minutes, stirring occasionally. Don't be shy about tasting and adjusting the seasoning!
Add the glaze:
After your ribs have cooked, brush them generously with your chosen sauce. Crank up the heat to 190°C/375°F and cook for another 20-30 minutes until glazed to perfection.
Rest and slice:
Let the ribs rest loosely covered for about 10 minutes before slicing them into individual pieces. This step is critical for juicy results!
Assemble the rib board:
Arrange the sliced ribs on a large platter and serve each sauce in charming little bowls. Garnish with pickles, cornbread, herbs, and onions for a beautiful display.
Serve and enjoy:
Gather your family around the table and dig in! Together, you can experience the joy of great food and even better company.

I'll forever cherish the laughter and stories shared around the rib board that day, as well as the satisfied smiles of those who devoured every last bite. It reminded me that great food has a way of creating unforgettable memories.

Enhancing Flavors

Consider experimenting with the spices to suit your family's palate, adding a pinch more chili powder for heat or extra garlic for robust flavor. The sauces can also be made ahead of time, which makes this dish perfect for planning parties or casual get-togethers.

Pairing Suggestions

Serving these ribs with a refreshing coleslaw can balance the richness, while a crisp glass of iced tea complements the smoky notes beautifully. If beer is your style, a cold, hoppy IPA can accentuate those bold flavors!

Leftovers Are a Treat

Leftover ribs can be transformed into sandwiches or added to salads—versatile and delicious!

  • Reheating in the oven keeps them juicy.
  • Don’t forget to save some sauce to drizzle over leftovers.
  • Try them in a breakfast hash for a unique twist!

How to Make

Step 01

Prep the ribs: Remove the thin membrane from the bone side of each rack. Brush lightly with olive oil. In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, chili powder, and cayenne. Rub all over both sides of the ribs.

Step 02

Preheat grill/smoker or oven: Heat your grill/smoker to 120°C/250°F for indirect cooking. If using an oven, preheat to 140°C/285°F.

Step 03

Cook ribs (first stage): Place ribs bone-side down. Grill or roast, covered, for 2 hours, turning once halfway.

Step 04

Prepare sauces: While ribs cook, make your sauces: combine all ingredients for each sauce in separate saucepans. Simmer each over medium-low heat for 10–15 minutes, stirring occasionally. Adjust seasoning to taste.

Step 05

Glaze and finish ribs: After 2 hours, brush ribs generously with your choice of sauce (or a mix). Up heat to 190°C/375°F. Grill or bake for 20–30 minutes more, basting once. Ribs should be deeply glazed and very tender.

Step 06

Rest and slice: Rest ribs loosely covered for 10 minutes. Slice into individual ribs.

Step 07

Assemble the board: Arrange sliced ribs on a large platter or board. Serve each sauce in small bowls with spoons. Garnish with pickles, cornbread, herbs, and onions if desired.
